This is a delicious and easy recipe for those nights when you need a healthy dish quick, but you still want to impress. I like to serve it with a big green salad and an easy vinaigrette or some steamed vegetables. You could serve this over mashed potatoes or cauliflower rice too. If you have a creamy soup from the day before, just reheat for a leftover upgrade.

Sesame Seared Tuna on Butternut Puree
Ingredients
- 4-6 oz tuna steaks for each person
- 1 tsp sesame seeds per tuna steak
- Sea salt and pepper
- 1 Tbsp coconut aminos or tamari per tuna steak
- 1 lime
- 1 Tbsp coconut oil, butter, duck fat, bacon fat, or ghee
- 1 butternut squash
- 1/4 cup coconut milk
- 2 Tbsp butter, coconut oil, or ghee
- 1 tsp curry powder
- Sea salt and pepper
Instructions
- Peel and chop the butternut squash
- Add them to a steamer basket over boiling water till soft (10 min)
- While steaming the butternut, sprinkle tuna steaks with salt and pepper
- Heat up a pan with 1 Tbsp healthy fat to medium heat
- Roll the tuna steaks through the sesame seeds
- Sear the tuna on one side for 2 minutes and flip over to sear the second side for 2 min
- Remove from heat to rest
- Remove the butternut and drain the water
- Add the butternut, coconut milk, and butter or coconut oil back to the pot
- Blend till smooth with an immersion blender or mashing tool
- Add curry powder, salt and pepper to taste
- Plate the fish on top of a butternut smear and garnish with fresh parsley
