A wonderful breakfast for a lazy weekend when the family needs something a little sweet. The baked oatmeal cake recipe is flexible so you can choose the ingredients you like. When it smells like oatmeal cookies in the house, you can expect happy faces.
Baked Oatmeal Cake
Ingredients
- 2 cups rolled oats
- 1 cup plain yogurt
- 3 pastured eggs
- 1/4 cup whole fat milk, coconut milk, or nut milk
- Juice of 1/2 an orange
- 2 Tbsp butter or coconut oil melted
- 1/4 cup maple syrup or raw honey
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup chopped nuts, raisins, or dried fruit of choice
Instructions
- Mix the yogurt into the oats and store overnight in the refrigerator
- Preheat the oven to 350º
- Blend in the rest of the ingredients
- Pour mixture inta a buttered pie plate
- Bake for 40 minutes
