This is a super, easy, colorful salad to accompany grilled meats and fresh fish. I love to toss it together with fresh herbs and crunchy peanuts right before dinner, but the flavors are best the next day. So make enough for leftovers and toss it in a to go container right after dinner. You’ll be so pleased to have a healthy lunch ready to go in the morning.

Easy Cabbage Salad
Ingredients
- 1/2 head of red cabbage
- 1/2 head of green cabbage
- 1 handful of fresh herbs (like mint and cilantro)
- 3 Tbsp walnut oil, olive oil would work also
- 2 Tbsp fresh lime juice
- 1 handful unsalted organic peanuts
Instructions
- Slice the cabbage as thinly as you can
- Chiffonnade or slice the herbs thinly too
- Pour over the oil and lime juice
- Toss in the peanuts
- Season lightly with sea salt and pepper
- Mix the salad well and let sit for at least an hour
